Menu for Our January 27th Dinner

Menu for our January 27th whole animal dinner at Cafe Fundamental
Each course will utilize different cuts of lamb, and are meant to be shared by the table
Cocktail parings for each course are included

Carpaccio – seared with juniper, rosemary and peppercorn
Country Sausage – rustic sausage made with roasted garlic, shallot and thyme

Gnocchi – ricotta gnocchi, red wine braised lamb ragout, grana padano cheese

Leg of Lamb- brined and whole roasted with natural jus
Crepinette – confit of lamb, pan seared with winter chicory salad
Savory Pies- butter and suet flaky pastry crust, traditional mincemeat filling

Sidesroasted beet, fennel and winter citrus salad 
             warm winter greens gratin

Panna Cotta – sheeps milk yogurt,  huckleberries, black walnut, butter cookies
