Sycamore is a project from husband and wife team Tony and Caroline Galzin, both formerly of Chicago. Tony, currently the pastry Chef at Flyte restaurant in Nashville, has established himself as a chef on both the sweet and savory sides of the kitchen at the acclaimed Chicago restaurants mk the restaurant, Perennial, Naha, and Trio. Caroline’s expertise lies in beverage and front of house operations, having worked at Chicago restaurants Leopold, mk the restaurant, and Le Colonial. She is the currently working as the beverage and service manager at Cafe Fundamental in East Nashville.
Tony and Caroline moved to Nashville in July with hopes of establishing themselves in the restaurant scene in Nashville as they work towards opening their restaurant. They will be hosting pop up dinners that collaborate with local brewers and distillers. Profits will be donated to Nashville charities over the coming months. Sycamore aims to be more than just a for profit restaurant, making philanthropy and giving back to the community a cornerstone of the business.
